Ingredients

For the Crispy Cauliflower:

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1 cup cold water

1 cup panko breadcrumbs

Oil for frying

For the Buffalo Sauce:

1/2 cup hot sauce (like Frank's RedHot)

1/4 cup unsalted butter (or vegan alternative)

1 tablespoon apple cider vinegar

1 teaspoon Worcestershire sauce (or vegan Worcestershire sauce)

For the Wraps:

4 large whole wheat or spinach tortillas

1 cup lettuce (shredded)

1 medium tomato, diced

1/2 cup red onion, sliced

1/2 cup ranch or blue cheese dressing (vegan alternative if desired)

Fresh cilantro or parsley for garnish (optional)

Instructions

Prepare the Cauliflower: In a large bowl, mix together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Gradually add cold water to the mixture, whisking until you have a smooth batter.

Bread the Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Then, coat each piece in the panko breadcrumbs, pressing gently to adhere.

Fry the Cauliflower: Heat oil in a deep skillet or fryer over medium-high heat. Fry the cauliflower in batches until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Make the Buffalo Sauce: In a small saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce, apple cider vinegar, and Worcestershire sauce until well combined. Keep warm.

Toss in Sauce: In a large bowl, combine the crispy cauliflower and buffalo sauce, tossing gently until all pieces are well-coated.

Assemble the Wraps: Lay a tortilla flat, then layer on the lettuce, diced tomato, sliced red onion, and a generous portion of the buffalo cauliflower. Drizzle ranch or blue cheese dressing over the top, if desired.

Wrap it Up: Fold in the sides of the tortilla and roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

Serve: Cut the wraps in half diagonally and serve immediately, garnished with fresh cilantro or parsley if desired.
