Crispy Chicken Tenders with Dipping Sauce

For the Chicken Tenders:

1 lb (450g) boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

2 cups panko breadcrumbs

Vegetable oil (for frying)

For the Dipping Sauce:

1/2 cup mayonnaise

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions
 

Prepare the Chicken:

    - Slice the chicken breasts into 1-inch wide strips. Pat them dry with paper towels for better breading adhesion.

      Set Up the Breading Station:

        - In three separate bowls, set up your breading station:

          - In the first bowl, combine the flour, garlic powder, onion powder, paprika, salt, and pepper.

            - In the second bowl, whisk together the eggs and Dijon mustard until well combined.

              - In the third bowl, place the panko breadcrumbs.

                Bread the Chicken:

                  - Dredge each chicken strip first in the flour mixture, shaking off the excess.

                    - Next, dip it into the egg mixture, ensuring it’s coated.

                      - Finally, coat the chicken strip in the panko breadcrumbs, pressing gently to ensure the breadcrumbs adhere well. Repeat with all chicken strips.

                        Heat the Oil:

                          - In a large frying pan, heat approximately 1/2 inch of vegetable oil over medium heat until it shimmers (about 350°F or 175°C).

                            Fry the Chicken Tenders:

                              - Carefully add the breaded chicken strips to the hot oil in batches, making sure not to overcrowd the pan. Fry each side for about 3-4 minutes or until golden brown and crispy.

                                - Remove the chicken tenders with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.

                                  Prepare the Dipping Sauce:

                                    - In a small bowl, mix together mayonnaise, honey, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper until smooth. Adjust seasoning to your taste.

                                      Serve:

                                        - Serve the hot crispy chicken tenders on a platter with the dipping sauce on the side.
