Crispy Fresh Summer Recipes Tacos

For the Crispy Tacos:

8 small corn tortillas

1 cup shredded cabbage (green or purple)

1 cup diced ripe tomatoes

1 ripe avocado, diced

1/2 cup crumbled feta cheese

1/4 cup chopped fresh cilantro

1 lime, juiced

Salt and pepper to taste

Vegetable oil (for frying)

For the Spicy Mango Salsa:

1 ripe mango, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup chopped fresh cilantro

Juice of 1 lime

Salt to taste

For the Creamy Chipotle Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

1-2 teaspoons chipotle in adobo sauce (adjust to taste)

1 teaspoon lime juice

Salt to taste

Instructions
 

Prepare the Spicy Mango Salsa:

    - In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

      Make the Creamy Chipotle Sauce:

        - In a small bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, chipotle in adobo, lime juice, and salt until smooth. Adjust seasoning as needed and set aside.

          Crispy Taco Preparation:

            - Heat vegetable oil in a deep skillet over medium heat. You need enough oil to submerge half of the tortilla.

              - While the oil heats, in a separate bowl, mix shredded cabbage, diced tomatoes, avocado, feta cheese, cilantro, lime juice, salt, and pepper. This will be your fresh taco filling.

                - Once the oil is hot (test by dropping in a small piece of tortilla; it should sizzle), carefully place one tortilla in the hot oil. Fry for about 30 seconds to 1 minute on each side, or until golden and crispy. Use tongs to hold the tortilla in shape if needed.

                  - Remove the crispy tortilla and let it drain on a paper towel. Repeat for the remaining tortillas.

                    Assemble the Tacos:

                      - Take each crispy taco shell and fill it generously with the fresh mixture of cabbage, tomatoes, avocado, feta, and cilantro.

                        - Top with a spoonful of spicy mango salsa and drizzle with the creamy chipotle sauce.

                          Serve:

                            - Serve the tacos immediately, with lime wedges on the side for an extra burst of freshness.
