1 pound of baby carrots, washed and trimmed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easier cleanup.

    Prepare Carrots: In a large mixing bowl, combine the baby carrots with olive oil, ensuring they are well-coated.

      Add Seasonings: Stir in the minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. Mix well to evenly distribute the seasonings.

        Roast Carrots: Spread the seasoned carrots in a single layer on the prepared baking sheet. Make sure not to overcrowd them, as this will help them crisp up.

          Bake: Place the baking sheet in the preheated oven and roast the carrots for about 20-25 minutes, or until they are tender and starting to caramelize. Toss them halfway through to ensure even cooking.
