4 large flour tortillas

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

1/4 teaspoon black pepper

2 tablespoons fresh basil, finely chopped (or 1 teaspoon dried basil)

1 cup marinara sauce (for dipping)

Olive oil, for brushing

Prepare the Cheese Mixture: In a large bowl, combine the shredded mozzarella, grated Parmesan, garlic powder, onion powder, red pepper flakes, black pepper, and fresh basil. Mix until well combined.

    Preheat the Skillet: Heat a non-stick skillet or a cast-iron skillet over medium heat. While the skillet is heating, prepare the tortillas.

      Fill the Tortillas: Lay one tortilla flat on a clean surface. Evenly spread about 1/2 cup of the cheese mixture over half of the tortilla, leaving the other half blank for folding. Fold the tortilla in half, pressing gently to secure the cheese inside. Repeat with the remaining tortillas.

        Brush with Olive Oil: Lightly brush both sides of each folded tortilla with olive oil. This will help them crisp up during cooking.

          Cook the Tortilla Melts: Once the skillet is hot, carefully place the first tortilla melt into the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip it using a spatula and cook for an additional 3-4 minutes on the other side. Repeat this process with the remaining tortilla melts.
