2 large sweet potatoes

2 tablespoons cornstarch

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for extra heat)

Fresh parsley or chives for garnish (optional)

Prep the Sweet Potatoes: Start by peeling the sweet potatoes. Using a waffle cutter or a mandolin set to a waffle blade, slice the sweet potatoes into waffle-shaped fries. If you don’t have a waffle cutter, slice them into regular fries and then cut them into a crosshatch pattern for a similar texture.

    Soak the Fries: Place the waffle fries in a large bowl and cover them with cold water. Let them soak for 30 minutes to remove excess starch, which helps achieve crispiness.

      Drain and Dry: After soaking, drain the fries and spread them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to ensure they are as moisture-free as possible.

        Season the Fries: In a large bowl, toss the dried sweet potato fries with cornstarch, olive oil, garlic powder, paprika, sea salt, black pepper, and cayenne pepper until evenly coated.

          Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

            Arrange the Fries: Lay the seasoned waffle fries in a single layer on the prepared baking sheet, ensuring they are not touching each other. This helps them crisp up better.
