Crispy Turkey Taco Lettuce Cups

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup canned black beans, rinsed and drained

1 medium tomato, diced

1 cup corn kernels (fresh or frozen)

1 avocado, diced

1 cup shredded cheddar cheese

1 cup sour cream or Greek yogurt

1 head of Romaine or Butter lettuce, leaves separated

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Seasonings: Increase the heat to medium-high and add the ground turkey. Break up the turkey with a spatula as it cooks. Once the turkey is browned (about 5-7 minutes), sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to combine the spices with the meat.

      Mix in Beans and Veggies: Stir in the black beans, diced tomato, and corn. Cook for another 3-4 minutes until the mixture is heated through. Remove from heat and set aside.

        Prepare Lettuce Cups: While the turkey mixture cools slightly, rinse and dry the lettuce leaves. Arrange them on a platter or individual plates.

          Assemble: Spoon the turkey mixture into each lettuce leaf cup. Top with diced avocado and shredded cheddar cheese.

            Add Toppings: Add a dollop of sour cream or Greek yogurt on top, and garnish with fresh cilantro or parsley. Serve with lime wedges on the side for squeezing over the tacos.
