Crockpot Chicken & Cheddar Pasta Bake

2 cups rotini pasta (or any pasta of choice)

2 cups cooked and shredded chicken (can use rotisserie chicken)

1 cup cheddar cheese, shredded (plus extra for topping)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup milk

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prep the Chicken: If you haven’t cooked your chicken yet, you can sauté it in a skillet with olive oil over medium heat until fully cooked. Shred it and set it aside.

    Cook the Pasta: Fill a large pot with water and bring it to a boil. Add the rotini pasta and cook it for 6-7 minutes, as it will continue to cook in the crockpot. Drain and set aside.

      Mix Ingredients: In a large bowl, combine the cooked pasta, shredded chicken, cheddar cheese, cream of chicken soup, chicken broth, milk, frozen mixed vegetables, garlic powder, onion powder, Italian seasoning, and season with salt and pepper. Stir until everything is well mixed.

        Transfer to the Crockpot: Grease the inside of your crockpot with a little olive oil or cooking spray. Pour the pasta mixture into the crockpot, spreading it evenly. If desired, sprinkle some extra cheese on top at this stage for an extra cheesy bake.

          Cook the Pasta Bake: Cover the crockpot and set it to low for 4-6 hours, or high for 2-3 hours. The pasta should absorb the flavors and sauce, and become tender.

            Serve: Once cooked, give it a gentle stir. Garnish with chopped fresh parsley and additional shredded cheddar cheese if desired.
