1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon fresh parsley, chopped (plus more for garnish)

1 teaspoon paprika

1 bay leaf

Salt and pepper, to taste

1 cup frozen peas

1 tablespoon olive oil

Sear the Chicken: In a skillet over medium heat, heat the olive oil. Season the chicken pieces with salt, pepper, and paprika, then add them to the skillet. Sear for about 4-5 minutes until browned on all sides. This step adds extra flavor to your stew.

    Prep the Vegetables: While the chicken is searing, prepare your vegetables. Chop the carrots, potatoes, celery, onion, and garlic as directed.

      Combine in Crockpot: In the crockpot, add the seared chicken, sliced carrots, diced potatoes, chopped celery, diced onion, and minced garlic.
