4 boneless, skinless chicken breasts

1 large cucumber, sliced into rounds

1 cup low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 teaspoon lemon juice

Salt and pepper to taste

1 cup cherry tomatoes, halved (for garnish)

1/2 cup Greek yogurt or sour cream (optional for serving)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. Place them at the bottom of the crockpot.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

      Assemble in Crockpot: Pour the sautéed mixture over the chicken. Add the sliced cucumber and sprinkle the fresh dill, parsley, and lemon juice on top.

        Add Broth: Pour the chicken broth into the crockpot, ensuring the chicken is mostly submerged.
