Crunchy Air-Fried Avocado Tacos

2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

¼ tsp cayenne pepper (optional)

Salt and black pepper, to taste

1 tbsp lime juice

8 small corn tortillas

1 cup shredded purple cabbage

½ cup fresh cilantro, chopped

1 jalapeño, sliced (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Avocados: Scoop out the flesh of each avocado half and place it in a bowl. Add lime juice, salt, and black pepper. Mash gently until you achieve a slightly chunky consistency.

    Coat the Avocados: In a shallow dish, mix together panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Take a spoonful of the mashed avocado, form it into a small patty or “chunk,” and dip it into the breadcrumb mixture until fully coated. Repeat with remaining avocado flesh.

      Air-Fry the Avocados: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Place the coated avocado pieces in a single layer in the air fryer basket, making sure they are not overlapping. Air-fry for 8-10 minutes until golden brown and crunchy, flipping halfway through for even crispiness.

        Warm the Tortillas: While the avocados are air-frying, lightly warm the corn tortillas in a dry skillet over medium heat for 30 seconds on each side until they are pliable.

          Assemble the Tacos: On each warm tortilla, place a generous amount of the shredded purple cabbage as the base. Top with the air-fried avocado pieces. Sprinkle the chopped cilantro and add a few slices of jalapeño on top for an extra kick.

            Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
