Ingredients

2 medium zucchini

1 cup bread crumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika (smoked for extra flavor)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Optional: fresh herbs (like oregano or thyme) for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare the Zucchini: Wash the zucchini and trim the ends. Slice the zucchini into thin rounds, about 1/8 inch thick. Thinner slices will yield crispier chips, so aim for consistency.

Make the Coating: In a medium bowl, combine the bread crumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure even distribution of spices.

Prepare the Egg Wash: In another bowl, beat the eggs with olive oil until well combined. This mixture will help the coating adhere to the zucchini slices.

Coat the Zucchini: Dip each zucchini slice first into the egg wash, allowing the excess to drip off, then coat it with the breadcrumb mixture. Press lightly to ensure the crumbs stick.

Arrange on Baking Sheet: Place the coated zucchini slices on the prepared baking sheet in a single layer. Make sure they aren’t overlapping for optimal crispiness.

Bake: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, turning the chips halfway through for even cooking.

Cool and Serve: Remove the zucchini chips from the oven and let them cool for a few minutes. Garnish with fresh herbs if desired. Serve alone, or with your favorite dip, like tzatziki or ranch dressing.
