1/3 cup roasted peanuts, chopped

1 avocado, diced

1/4 cup sesame seeds (toasted, optional)

For the Dressing:

3 tablespoons smooth peanut butter

2 tablespoons soy sauce (or coconut aminos for a gluten-free version)

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or maple syrup (for vegan option)

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon water (for desired consistency)
