1 large cucumber, thinly sliced

8 oz cream cheese, softened

2 tbsp sour cream

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp lemon juice

1/2 tsp garlic powder

Salt and pepper to taste

8 slices of whole grain or white bread

4-6 lettuce leaves (optional)

Fresh chives for garnish (optional)

Instructions
 

Prepare the Cream Cheese Mixture:

    In a medium bowl, combine the softened cream cheese, sour cream, fresh dill, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well combined.

      Slice the Cucumber:

        Wash the cucumber and slice it thinly using a sharp knife or a mandoline slicer for even thickness.

          Assemble the Sandwiches:

            - Lay out 4 slices of bread on a cutting board.

              - Spread a generous layer of the cream cheese mixture on each slice.

                - If desired, place a lettuce leaf on top of the cream cheese.

                  - Arrange 3-4 cucumber slices over the lettuce or directly on the cream cheese, ensuring they are even and slightly overlapping.

                    Finish the Sandwiches:

                      Top each sandwich with another slice of bread to create complete sandwiches. Press down gently.

                        Cut and Serve:

                          Using a sharp knife, cut each sandwich into quarters or triangles. Arrange them on a platter and garnish with fresh chives, if using.

                            Chill (Optional):
