2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1/2 cup red onion, thinly sliced (optional)

1/2 cup fresh cilantro, chopped (optional, for garnish)

Sour cream or ranch dressing, for serving

Instructions
 

Prep the Chicken: In a medium bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is fully coated.

    Heat the Pan: In a large skillet, heat the olive oil over medium heat.

      Assemble the Quesadillas: Lay one tortilla in the skillet. Spread half of the BBQ chicken mixture evenly over half of the tortilla. Top with a generous amount of cheddar and mozzarella cheese. If desired, add some sliced red onion for extra flavor. Fold the tortilla in half to cover the filling.
