Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1 bag (12 oz) tortilla chips

2 cups shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 small jalapeño, sliced (optional)

1 cup diced tomatoes (fresh or canned)

½ cup sliced black olives

¼ cup chopped fresh cilantro

1 cup sour cream or Greek yogurt

1 avocado, sliced (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Chicken: In a small bowl, mix the olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Rub this mixture evenly over the chicken breasts.

Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing it into thin strips.

Layer the Nachos: On a large baking sheet or oven-safe platter, spread out the tortilla chips in an even layer. Top with the sliced grilled chicken, drained black beans, and diced tomatoes.

Cheesy Goodness: Sprinkle the shredded cheddar cheese generously over the top.

Melt the Cheese: Place the nachos under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Keep a close eye on them so they don’t burn!

Final Touches: Remove from the oven and add sliced jalapeños, black olives, and chopped cilantro on top.

Serve: Add dollops of sour cream (or Greek yogurt) and garnish with sliced avocado. Serve the nachos hot with lime wedges on the side for an extra zest!
