1 pound ground beef (or turkey)

1 packet taco seasoning (1 oz)

12 small flour tortillas

1 cup shredded cheddar cheese

1 cup refried beans

1 cup diced tomatoes

1 cup shredded lettuce

1/2 cup sour cream

1/4 cup sliced jalapeños (optional)

1/4 cup fresh cilantro, for garnish

Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the taco cups.

    Cook the meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking apart with a spatula. Drain any excess grease.

      Season: Stir in the taco seasoning along with a splash of water (about 1/4 cup). Cook for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat.

        Prepare the tortillas: Using a round cutter or a large glass, cut out circles from each tortilla. You will need to create 12 mini cups.

          Form the cups: Lightly spray a muffin tin with cooking spray. Press each tortilla circle into the muffin tin to form a cup shape, making sure the edges come up over the sides.

            Layer the ingredients: In each tortilla cup, start by adding a spoonful of refried beans at the bottom, followed by a layer of the seasoned meat, and then a sprinkle of cheddar cheese on top.

              Bake: Place the muffin tin in the oven and bake for about 10-12 minutes or until the cheese is melted and the tortillas are golden brown.

                Garnish and serve: Remove the taco cups from the oven and let them cool for a minute. Top each cup with diced tomatoes, shredded lettuce, a dollop of sour cream, and jalapeños if desired. Finish with a sprinkle of fresh cilantro for a burst of color and flavor.
