1 lb (450 g) large shrimp, peeled and deveined

1 cup long-grain white rice (like basmati or jasmine)

2 cups low-sodium chicken broth

3 tbsp olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add the shrimp, sprinkle with salt, pepper, paprika, and half of the garlic. Sauté for about 2-3 minutes until shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

    Cook Aromatics: In the same skillet, add the remaining tablespoon of olive oil along with the remaining garlic. Sauté for about 30 seconds until fragrant.

      Toast Rice: Add the rice to the skillet, stirring it into the oil and garlic. Toast the rice for about 2 minutes, allowing it to absorb some flavor.

        Add Liquids and Seasoning: Pour in the chicken broth, lemon juice, lemon zest, and oregano. Stir to combine all ingredients.

          Simmer Rice: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-18 minutes or until the rice is tender and has absorbed the liquid.

            Incorporate Shrimp and Tomatoes: Once the rice is cooked, gently fold in the sautéed shrimp and the halved cherry tomatoes. Cover the skillet again and let it sit for another 5 minutes on low heat for the flavors to meld.

              Garnish and Serve: Remove the skillet from heat. Fluff the rice with a fork, sprinkle with fresh parsley, and serve with lemon wedges on the side.
