6 large eggs

1 cup shredded cheddar cheese

1/2 cup milk

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

Cooking spray or muffin liners

Instructions
 

Preheat your oven to 350°F (175°C). If using, line a 12-cup muffin tin with muffin liners or lightly grease with cooking spray.

    In a large mixing bowl, whisk together the eggs and milk until fully combined.

      Add shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, onion powder, salt, black pepper, and paprika (if using) to the egg mixture. Stir until all the ingredients are well incorporated.

        Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.

          Bake in the preheated oven for 18-20 minutes, or until the muffins are set in the center and lightly golden on top. You can check doneness by inserting a toothpick; it should come out clean.

            Remove from the oven and allow the muffins to cool in the tin for about 5 minutes.

              Using a fork or knife, carefully lift each muffin out and place them on a wire rack to cool completely.

                Serve warm or let cool and store in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 30 seconds when ready to eat.
