1 medium eggplant, diced into cubes

1 cup diced cucumbers

1 cup cooked chickpeas (canned or boiled)

1/4 cup tahini

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

4 large whole grain or spinach wraps

Fresh parsley, chopped (for garnish)

Optional: Feta cheese crumbles for topping

Roast the Eggplant: Preheat your oven to 400°F (200°C). In a bowl, toss the diced eggplant with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast in the oven for about 20-25 minutes or until the eggplant is golden and tender, flipping halfway through for even cooking. Allow to cool slightly.

    Prepare the Hummus: In a food processor, add the roasted eggplant, chickpeas, tahini, lemon juice, minced garlic, ground cumin, and a pinch of salt and pepper. Blend until smooth and creamy, scraping down the sides as needed. If the mixture feels too thick, you can add a splash of water to achieve your desired consistency.

      Assemble the Wraps: Lay out the whole grain or spinach wraps on a clean surface. Spread an even layer of the eggplant hummus in the center of each wrap, leaving a small border around the edges. Top with diced cucumbers and sprinkle with fresh parsley. If desired, add some crumbled feta cheese for an extra burst of flavor.
