Falafel Wraps with Tahini

For the Falafel:

1 cup dried chickpeas (soaked overnight)

1 small onion, roughly chopped

4 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper to taste

Oil for frying

For the Tahini Sauce:

1/2 cup tahini

1/4 cup water (adjust for desired consistency)

2 tbsp lemon juice

1 clove garlic, minced

Salt to taste

For the Wraps:

4 large whole wheat or pita wraps

1 cup lettuce, chopped

1 tomato, diced

1 cucumber, sliced

Pickles (optional)

Fresh mint leaves (optional)

Instructions
 

Prepare the Falafel Mixture: Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture becomes a coarse paste. Do not over-process; you want some texture. Transfer to a bowl and chill for at least 30 minutes.

    Shape the Falafel: Once chilled, use your hands to shape the mixture into small balls or patties (about 1.5 inches in diameter). If the mixture is too crumbly, add a tablespoon of water to help bind it.

      Fry the Falafel: Heat oil in a deep skillet over medium-high heat. Carefully add the falafel balls and fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

        Make the Tahini Sauce: In a bowl, whisk together the tahini, water, lemon juice, minced garlic, and salt until smooth. Adjust the water according to the desired consistency; you want it creamy but pourable.

          Assemble the Wraps: On each wrap, layer the lettuce, diced tomatoes, cucumber slices, and freshly cooked falafel. Drizzle generously with tahini sauce. Add pickles and mint leaves if desired.

            Wrap and Serve: Fold in the sides of the wrap and roll tightly from the bottom. Cut in half if desired, and serve immediately with extra tahini sauce on the side.
