Family-Friendly Chicken Alfredo Pasta Bake

2 cups rotini or penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup frozen peas (optional)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Preheat your oven to 375°F (190°C). In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is no longer pink. Add minced garlic and sauté for another minute until fragrant.

      Prepare the Alfredo Sauce: Pour in heavy cream and chicken broth into the skillet with cooked chicken. Stir in Italian seasoning and adjust seasoning with salt and pepper. Bring the mixture to a gentle simmer for about 5 minutes, allowing the sauce to thicken slightly.

        Combine Ingredients: Remove the skillet from heat. In a large mixing bowl, combine the cooked pasta, Alfredo sauce with chicken, and add frozen peas if using. Gently fold in 1 1/2 cups of mozzarella cheese and 1/2 cup of Parmesan cheese until well combined.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly. Sprinkle the remaining mozzarella and Parmesan cheese over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.
