3 ripe mangoes, peeled and diced

1 cup coconut water

1/2 cup granulated sugar (adjust for sweetness)

2 tablespoons fresh lime juice

A pinch of sea salt

Prepare the Mangoes: In a blender, combine the diced mangoes, coconut water, granulated sugar, lime juice, and sea salt. Blend until smooth, scraping down the sides as needed to ensure everything is well incorporated.

    Taste and Adjust: Taste the mixture and adjust the sweetness if necessary by adding a bit more sugar or lime juice, depending on your preference. Blend again for a few seconds if you add anything.

      Chill the Mixture: Pour the mango mixture into a bowl and cover it with plastic wrap. Place it in the refrigerator for about 1 hour to chill the mixture; this helps in achieving a smoother texture when freezing.

        Freeze and Stir: After chilling, transfer the mixture into a shallow dish or a flat ice cream container. Freeze for about 30 minutes, then stir it vigorously with a fork to break up any ice crystals that might begin to form. Return to the freezer. Repeat this every 30 minutes for about 2 to 3 hours until the sorbet is firm and fluffy.
