Fresh Veggie Sushi Wraps

4 large nori sheets

1 cup sushi rice (or brown rice for a healthy twist)

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1/2 cup sliced cucumber

1/2 cup julienned carrots

1/2 cup sliced bell peppers (a mix of colors for vibrancy)

1 avocado, sliced

1/4 cup shredded red cabbage

1/4 cup chopped fresh cilantro or basil

1/4 cup pickled ginger (for serving)

Soy sauce or tamari (for dipping)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly before fluffing it with a fork.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently stir this mixture into the warm rice until evenly coated. Let it cool to room temperature.

      Prep the Veggies: While the rice is cooling, prepare your vegetables by washing and slicing them into thin strips. Arrange them in an attractive manner for easy assembly.

        Assemble the Wraps: Lay a nori sheet shiny side down on a clean bamboo sushi mat or cutting board. With wet hands, spread a thin layer of sushi rice on the bottom two-thirds of the nori. Leave a small border of nori at the bottom and one on each side.

          Layer the Veggies: On top of the rice, add a line of sliced cucumber, carrots, bell peppers, avocado, red cabbage, and a sprinkle of cilantro or basil.

            Roll the Sushi: Starting from the bottom, carefully roll the sushi tightly away from you, tucking in the ingredients as you go. Use the bamboo mat to help shape and roll it evenly. Seal the edge by moistening it with a little water.
