1 medium ripe watermelon

1 cup cooked quinoa

1 cup black beans, drained and rinsed

1/2 cup corn, fresh or frozen (thawed)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 lime, juiced

1 teaspoon chili powder

Salt and pepper, to taste

1/2 cup crumbled feta or queso fresco (optional)

Fresh lime wedges, for serving

Instructions
 

Prepare the Watermelon Shells:

    - Cut the watermelon in half lengthwise. Using a sharp knife, carve out the insides to create a hollow shell, making sure to leave at least 1 inch of flesh around the edges. Reserve the watermelon flesh for the filling.

      Make the Filling:

        - In a bowl, combine cooked quinoa, black beans, corn, red onion, and chopped cilantro. Dice the reserved watermelon flesh into small cubes and add it to the mixture. Gently fold in the avocado.

          Season the Mixture:

            - Squeeze lime juice over the filling, then add chili powder, salt, and pepper to taste. Mix lightly to combine all ingredients without mashing the avocado.

              Assemble the Tacos:

                - Spoon the mixture into the hollowed-out watermelon halves. If desired, sprinkle crumbled feta or queso fresco on top for added flavor.

                  Serve & Enjoy:
