2 large ripe bananas

¼ cup creamy or crunchy peanut butter (or almond butter)

½ cup semi-sweet chocolate chips

2 tablespoons coconut oil (or butter)

¼ teaspoon sea salt

½ teaspoon vanilla extract

½ cup crushed graham crackers or crushed nuts (for coating)

Optional: a sprinkle of cinnamon or a drizzle of honey for serving

Prepare the Bananas: Peel the bananas and slice them into rounds, about 1/2 inch thick. You should have around 20 slices in total, depending on the size of the bananas.

    Assemble the Sandwiches: Spread about 1 teaspoon of peanut butter on one banana slice and top it with another banana slice to create a sandwich. Repeat this step until all banana slices are used.

      Freeze the Sandwiches: Place the assembled banana sandwiches in a single layer on a baking sheet lined with parchment paper. Freeze for about 1 hour, or until firm.

        Melt the Chocolate: In a small microwave-safe bowl, combine the chocolate chips and coconut oil (or butter). Microwave in 30-second intervals, stirring in between, until fully melted and smooth. Stir in sea salt and vanilla extract for added flavor.
