Ingredients

1 ½ cups rolled oats

½ cup unsweetened shredded coconut

½ cup almond butter (or any nut/seed butter of choice)

½ cup pure maple syrup (or honey)

¼ cup cocoa powder

½ teaspoon vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (dairy-free if needed)

2 tablespoons coconut oil

Instructions

In a large mixing bowl, combine the rolled oats and shredded coconut. Mix them well to ensure they are evenly distributed.

In a separate bowl, whisk together the almond butter, maple syrup, cocoa powder, vanilla extract, and sea salt until smooth and creamy.

Pour the wet mixture into the bowl with the oats and shredded coconut. Stir until all the ingredients are well combined and the oats are fully coated.

Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal.

Press the oat mixture evenly into the bottom of the prepared baking dish, using the back of a spatula to create a smooth, even layer.

In a small saucepan over low heat, melt the dark chocolate chips and coconut oil together, stirring continuously until smooth.

Pour the melted chocolate over the pressed oat mixture and use a spatula to spread it evenly over the top.

Place the baking dish in the freezer for about 1-2 hours, or until the chocolate is fully set and the slice is firm.

Once set, lift the slices out of the dish using the parchment paper overhang. Cut them into squares or rectangles.

Store the slices in an airtight container in the freezer for up to two months. Enjoy them directly from the freezer for a refreshing treat!
