2 ripe bananas, peeled and sliced

1 cup coconut milk (canned or carton)

1/2 cup Greek yogurt (or coconut yogurt for a dairy-free option)

1 tbsp honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1/2 tsp cinnamon (optional)

A pinch of salt

1 cup shredded unsweetened coconut (for coating)

Instructions
 

Prepare the Smoothie Base: In a blender, combine sliced bananas, coconut milk, Greek yogurt, honey or maple syrup, vanilla extract, cinnamon, and a pinch of salt. Blend on high until smooth and creamy. You may need to scrape down the sides of the blender to ensure everything is well combined.

    Set up for Freezing: Line a baking sheet with parchment paper. Use a cookie scoop or spoon to dollop tablespoon-sized portions of the smoothie mixture onto the prepared sheet. Gently flatten each dollop into coin shapes (about 1/2 inch thick).

      Coat with Coconut: Place the shredded coconut in a shallow dish. Take each smoothie coin and gently press it into the coconut, coating one side well. Place the coated coins back onto the parchment-lined baking sheet.

        Freeze the Coins: Once all smoothie coins are shaped and coated, transfer the baking sheet to the freezer. Freeze for at least 3-4 hours, or until the coins are completely solid.

          Store for Later: Once frozen, carefully transfer the smoothie coins to an airtight container or a resealable plastic bag. Store them in the freezer for up to 2 months.
