4 ripe kiwis, peeled and chopped

1 cup coconut milk (full fat for creaminess)

1/2 cup shredded unsweetened coconut (plus extra for topping)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 cup lime juice (freshly squeezed)

1/4 teaspoon sea salt

1 tablespoon coconut oil (for greasing the pan)

Prepare the Pan: Lightly grease an 8x8 inch square baking dish with the coconut oil. Line the bottom with parchment paper for easy removal, allowing some overhang for easier lifting once set.

    Blend the Kiwi: In a blender or food processor, add the chopped kiwis. Blend until smooth, then set aside in a bowl. If you prefer some texture, reserve a few kiwi pieces for mixing in later.

      Mix the Base: In the same blender, combine the coconut milk, shredded coconut, honey or maple syrup, vanilla extract, lime juice, and sea salt. Blend until fully combined and creamy.

        Combine Mixtures: Gently fold the blended coconut mixture into the bowl with the kiwi puree. If you reserved some kiwi pieces, fold them in now for added texture and freshness.

          Pour and Spread: Pour the combined mixture into the prepared baking dish. Use a spatula to smooth the top evenly. Sprinkle extra shredded coconut on top for a beautiful finish.

            Freeze: Cover the dish with plastic wrap or a lid and place in the freezer for at least 4-6 hours or until completely firm.

              Slice and Serve: Once frozen, remove the bars from the dish using the parchment overhang. Slice into desired squares or rectangles with a sharp knife. Let them soften for a few minutes before serving for easier eating.
