Frozen Mint Chocolate Smoothie Cups

2 cups fresh spinach or kale (for vibrant green color)

1 large ripe banana, frozen

1 cup unsweetened almond milk (or milk of choice)

1 teaspoon pure vanilla extract

2 tablespoons unsweetened cocoa powder

1 tablespoon maple syrup (adjust for sweetness)

1/4 cup fresh mint leaves, packed (plus extra for garnish)

1/4 cup dark chocolate chips (or cacao nibs for a healthier option)

1 cup Greek yogurt (for creaminess)

1/4 cup mini chocolate chips (for topping)

Instructions
 

Prepare the Base: In a high-speed blender, combine the spinach (or kale), frozen banana, almond milk, vanilla extract, cocoa powder, maple syrup, mint leaves, and Greek yogurt. Blend until the mixture is completely smooth and creamy.

    Taste and Adjust: Taste the smoothie mixture and adjust sweetness if needed by adding more maple syrup. If you prefer a stronger mint flavor, add a few extra mint leaves and blend again.

      Add Chocolate: Gently fold in the dark chocolate chips or cacao nibs to the smoothie for an added chocolatey texture.
