Ingredients

1 cup unsweetened shredded coconut

1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/2 cup melted coconut oil

1/2 cup maple syrup or agave nectar

1/2 cup full-fat coconut milk

1 cup brewed espresso, cooled

1/4 cup chocolate chips (dark or semi-sweet)

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

Prepare the Base: In a medium bowl, combine the shredded coconut, graham cracker crumbs, cocoa powder, and salt. Mix well.

Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth. Add the cooled espresso and full-fat coconut milk, whisking until fully combined.

Mix Together: Gradually pour the wet mixture into the dry ingredients, stirring until a thick and sticky dough forms. Fold in the chocolate chips.

Line the Pan: Line an 8x8-inch square baking dish with parchment paper, allowing some overhang on the sides for easy removal.

Spread the Mixture: Press the mixture evenly into the prepared baking dish, using your hands or a spatula to compact it firmly.

Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until completely firm.

Cut into Squares: Once frozen, remove the dessert from the pan using the parchment overhang and transfer it to a cutting board. Use a sharp knife to cut into squares.

Serve: Serve immediately or store the squares in an airtight container in the freezer for up to 2 weeks. Enjoy these chilled!
