Frozen Pineapple Mango Yogurt Bites

1 cup ripe pineapple, diced

1 cup ripe mango, diced

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free option)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: shredded coconut, granola, crushed nuts, or chocolate chips

Instructions
 

Blend the Fruits: In a blender or food processor, combine the diced pineapple and mango. Blend until you achieve a smooth puree. You can leave a few small chunks for texture if desired.

    Mix Ingredients: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until the mixture is smooth and well combined.

      Combine Fruits and Yogurt: Gently fold the fruit puree into the yogurt mixture. Ensure that the fruit is evenly distributed throughout the yogurt.

        Prepare the Molds: Line a mini muffin tin or silicone mold with cupcake liners (optional for easy removal). If you do not have silicone molds, you can also use an ice cube tray.

          Fill the Molds: Spoon the yogurt and fruit mixture into the molds, filling them almost to the top. Give them a gentle tap on the counter to remove any air bubbles.

            Add Toppings: If desired, sprinkle the optional toppings of your choice (shredded coconut, granola, crushed nuts, or chocolate chips) on top of each yogurt bite.

              Freeze: Place the molds in the freezer and allow them to freeze for at least 4 hours, or until completely solid.
