Ingredients

4 cups fresh pineapple chunks, frozen

1 can (14 oz) coconut cream, chilled

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lime juice

½ teaspoon sea salt

Waffle cones or cups, for serving

Toasted coconut flakes, for garnish

Fresh mint leaves, for garnish (optional)

Instructions

Preparation of Pineapple: Spread the fresh pineapple chunks on a baking sheet in a single layer. Freeze for at least 4 hours or until solid.

Blend Ingredients: In a high-powered blender or food processor, combine the frozen pineapple chunks, chilled coconut cream, honey or maple syrup, vanilla extract, lime juice, and sea salt.

Blend Until Smooth: Pulse on high until the mixture is smooth and creamy, scraping down the sides as necessary. You want a soft-serve consistency. If the mixture is too thick, add a tablespoon of coconut cream to help it blend.

Taste Test: Give it a taste and adjust the sweetness if desired by adding more honey or syrup.

Serve: Using a spatula or ice cream scoop, fill waffle cones or cups with the creamy pineapple whip.

Garnish: Top with toasted coconut flakes and fresh mint leaves, if desired, for an extra tropical touch.

Enjoy: Serve immediately for the best texture, or freeze for 30 minutes if you prefer a firmer ice cream-like treat.
