Ingredients

2 cups fresh or frozen raspberries

2 cups Greek yogurt (plain or vanilla)

3 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (store-bought or homemade)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Raspberry Layer: In a blender or food processor, combine the raspberries, Greek yogurt, honey (or maple syrup), and vanilla extract. Blend until smooth. You can leave some raspberry bits for texture if preferred.

Taste and Adjust: Taste the mixture and add more honey or syrup if you desire it sweeter. Blend again briefly to combine.

Fill the Cups: Line a muffin tin with paper liners or use silicone molds. Spoon the raspberry yogurt mixture evenly into each cup, filling them about ¾ full.

Add Granola Layer: Sprinkle a generous layer of granola on top of each yogurt cup, pressing down gently to help it adhere. This will give a nice crunch when frozen.

Freeze: Place the muffin tin in the freezer and allow the yogurt cups to freeze for about 4-6 hours, or until completely solid.

Serve: Once frozen, carefully peel away the paper liners or pop the cups out of silicone molds. Serve immediately. Garnish with fresh mint leaves if desired.

Storage: Any leftovers can be kept in a sealed container in the freezer for up to 2 weeks. Thaw for a few minutes at room temperature before enjoying.

Prep Time: 15 minutes | Total Time: 4-6 hours (freezing time) | Servings: 12 mini cups
