2 cups fresh strawberries, hulled and chopped

1 tablespoon honey (or maple syrup for vegan option)

1 teaspoon vanilla extract

2 cups Greek yogurt (or dairy-free yogurt)

1 tablespoon lemon juice

Pinch of salt

1/4 cup granola or chopped nuts (for topping, optional)

Instructions
 

Prepare Strawberries: In a medium bowl, combine the chopped strawberries and honey (or maple syrup). Allow them to sit for about 10 minutes to macerate, releasing their juices.

    Blend Mixture: In a blender or food processor, add the macerated strawberries (including the juices), Greek yogurt, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy. You can leave a few chunks of strawberries for added texture if desired.

      Pour into Molds: Pour the yogurt mixture evenly into silicone molds or an 8x8-inch baking dish. Tap the dish gently on the counter to remove any air bubbles.

        Insert Sticks: If using molds, insert wooden sticks. If using a baking dish, simply smooth the top with a spatula.

          Freeze: Place in the freezer for at least 4 hours, or until completely frozen.

            Remove and Cut: If using a baking dish, remove the frozen yogurt slab from the dish and cut it into bars. If you used molds, gently pull the frozen bars out.
