Frozen Yogurt Almond Joy Circles

Ingredients
  

2 cups vanilla Greek yogurt

1/2 cup shredded coconut, unsweetened

1/4 cup almond butter (smooth)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped almonds

Pinch of sea salt

Cooking spray (optional, for lining molds)

Instructions
 

Prepare the Yogurt Mixture:

    In a mixing bowl, combine the vanilla Greek yogurt, almond butter, honey, and vanilla extract. Mix until all ingredients are well incorporated and smooth.

      Add Coconut and Nuts:

        Gently fold in the shredded coconut, chopped almonds, and a pinch of sea salt into the yogurt mixture. Make sure the coconut and almonds are evenly distributed.

          Mold the Circles:

            If using silicone molds, spray lightly with cooking spray for easier removal. Spoon the yogurt mixture into the molds, filling them about 2/3 full. Gently tap the molds on the counter to remove any air bubbles.

              Melt the Chocolate:

                In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth and fully melted. Avoid overheating.

                  Top with Chocolate:

                    Remove the filled molds from the freezer after about 30 minutes, when the yogurt is partially frozen but still pliable. Drizzle or spoon the melted chocolate over the top of each yogurt circle, making sure to cover them evenly.

                      Final Freeze:

                        Return the molds to the freezer and allow the frozen yogurt circles to set for a minimum of 4 hours, or until completely frozen through.

                          Serve:

                            Once fully frozen, remove the yogurt circles from the molds. Let them sit at room temperature for a couple of minutes for easier removal if needed. Serve immediately and enjoy your Almond Joy inspired treat!
