1 ½ cups rolled oats

½ cup almond flour (or regular flour)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup maple syrup or honey

¼ cup coconut oil, melted

1 tsp vanilla extract

1 ½ cups plain Greek yogurt

1 ½ cups fresh or frozen blueberries (if using frozen, do not thaw)

Optional toppings: chopped nuts, sliced almonds, shredded coconut

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, and salt. Stir until evenly mixed.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract until well combined.

        Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.

          Add Yogurt and Blueberries: Gently fold in the Greek yogurt until fully incorporated, followed by the blueberries. If using frozen blueberries, fold them in gently to prevent coloring the mixture.
