1 cup rolled oats

½ cup coconut oil, melted

½ cup honey or maple syrup

1 teaspoon vanilla extract

2 cups vanilla or coconut-flavored yogurt (Greek yogurt for a creamier texture)

1/4 cup mini chocolate chips (optional)

Fresh coconut flakes for topping (optional)

Prepare the Crust: In a large mixing bowl, combine the shredded coconut, chopped pecans, and rolled oats. Pour in the melted coconut oil, honey (or maple syrup), vanilla extract, and salt. Mix thoroughly until everything is well combined and evenly coated.

    Press the Mixture: Line a 9x9 inch square baking dish with parchment paper, leaving a bit overhanging for easy removal later. Transfer the crust mixture into the prepared dish. Using a spatula or the back of a measuring cup, press it down firmly and evenly across the bottom of the dish to form a solid crust.

      Freeze the Crust: Place the baking dish in the freezer for about 15-20 minutes to allow the crust to firm up and hold its shape.
