1 cup Greek yogurt (plain or vanilla)

1 cup fresh figs, chopped (or dried figs, rehydrated)

½ cup coconut milk

¼ cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

½ cup shredded unsweetened coconut

¼ teaspoon sea salt

Optional: Fresh figs and shredded coconut for garnish

Instructions
 

Prep the Figs: If using dried figs, soak them in warm water for about 15 minutes to rehydrate. If fresh, wash and chop them into small pieces.

    Blend Ingredients: In a large mixing bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and sea salt. Use a whisk to blend the ingredients until smooth.

      Incorporate Figs and Coconut: Gently fold in the chopped figs and shredded coconut into the yogurt mixture. Ensure even distribution without mashing the figs.

        Prepare the Mold: Line an 8x8 inch (20x20 cm) baking dish with parchment paper for easy removal. If you don’t have parchment, lightly grease the dish with coconut oil.

          Pour Mixture: Pour the yogurt mixture into the prepared baking dish, spreading it evenly. Smooth out the top with a spatula.

            Freeze: Cover the dish with plastic wrap or a lid. Freeze for at least 4-6 hours or until fully set (you can also leave it overnight for best results).

              Cut & Serve: Once frozen, remove from the dish using the parchment paper. Let it sit at room temperature for a few minutes to soften slightly. Cut into bars or squares.

                Garnish (Optional): Top the bars with fresh fig slices and a sprinkling of shredded coconut for an extra tropical touch before serving.
