Ingredients

1 cup rolled oats

1 cup almond flour (or all-purpose flour)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (or chunks)

1 cup yogurt (Greek or regular, any flavor of your choice)

1/2 cup fruit (berries or chopped fruit of choice) for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, baking powder, baking soda, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is fully combined. Fold in the dark chocolate chips.

Spread and Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 15-18 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

Cool and Freeze: Allow the bars to cool completely in the pan. Once cooled, spread an even layer of yogurt on top of the bars. You can use any variety of yogurt, flavored or plain, based on your preference.

Add Toppings: Sprinkle your chosen fruit on top of the yogurt layer in an even distribution.

Freeze: Cover the baking dish with plastic wrap or aluminum foil and freeze the whole thing for at least 3-4 hours, or until the yogurt is frozen solid.

Slice and Serve: Once frozen, remove the bars from the baking dish using the parchment paper edges. Slice into squares or rectangles as desired.

Enjoy: You can enjoy these bars straight from the freezer or let them sit out for a few minutes to soften slightly before serving. They make for a perfect snack or light dessert!
