Ingredients

2 cups cooked pasta (any shape, preferably shells or bowties)

1 cup mixed fresh fruits (strawberries, blueberries, peaches, or any in-season fruits, chopped)

1 cup ricotta cheese

1 cup Greek yogurt

1/2 cup shredded mozzarella cheese

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 cup granola (for topping)

Fresh mint leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Pasta: Cook the pasta according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Mix the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Mix well until smooth and creamy.

Combine the Ingredients: In a large mixing bowl, gently fold the cooked pasta and mixed fresh fruits into the ricotta mixture until everything is well coated.

Prepare the Baking Dish: Lightly grease a medium-sized baking dish (about 9x13 inches). Transfer the pasta and fruit mixture into the dish, spreading it out evenly.

Add Toppings: Sprinkle the shredded mozzarella cheese over the top of the pasta bake. Then, follow with an even layer of granola to add that crunch.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and the top is golden brown.

Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh mint leaves before serving for a pop of color and freshness.
