1 medium zucchini, sliced into half-moons

1 bell pepper (any color), chopped

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 medium red onion, cut into wedges

4 cloves garlic, minced

1/4 cup unsalted butter, melted

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

1 tablespoon balsamic vinegar (optional, for drizzling)

Instructions
 

Prepare the Veggies: Preheat your oven to 425°F (220°C). While the oven heats, prepare your vegetables. Clean and chop the zucchini, bell pepper, cherry tomatoes, broccoli, and red onion, placing them all in a large mixing bowl.
