1 (32 oz) bag frozen tater tots

6 large eggs

1 cup shredded cheddar cheese (or cheese of your choice)

1/2 cup cooked and crumbled breakfast sausage (or bacon)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped green onions

1/4 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Olive oil spray or cooking spray

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Muffin Tin: Lightly spray a 12-cup muffin tin with olive oil spray or cooking spray to prevent sticking.

      Form the Tater Tot Cups: Place about 6-7 tater tots in each muffin cup, depending on the size of your tots. Use a fork or your fingers to press them down and mold them into a cup shape. The tater tots should create a well in the center for filling.

        Pre-bake Tater Cups: Bake the tater tot cups in the preheated oven for about 15 minutes, or until they start to turn golden brown.

          Mix the Filling: While the tater tots are baking, crack the eggs into a mixing bowl. Add the shredded cheese, crumbled sausage (or bacon), diced bell peppers, green onions, garlic powder, smoked paprika, salt, and black pepper. Whisk until well combined.

            Fill the Tater Cups: After the tater cup shells are pre-baked, carefully remove them from the oven. Pour the egg mixture evenly into each tater tot cup, filling them almost to the top.
