1 cup cornmeal

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 tablespoon granulated sugar

2 large eggs

1 cup buttermilk

1/2 cup milk

1/4 cup melted butter

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

Oil for frying

Prepare the Chicken: In a medium bowl, combine the chicken pieces, smoked paprika, garlic powder, and black pepper. Toss well to coat and set aside to marinate for at least 20 minutes to infuse the flavors.
