2 large eggs

Prepare the Potatoes: Place the grated potatoes in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible. This step is crucial for achieving crispy pancakes.

    Mix the Ingredients: In a large mixing bowl, combine the drained grated potatoes, chopped onion (if using), eggs, flour, baking powder, salt, pepper, garlic powder, and fresh herbs. Mix until all ingredients are well incorporated.

      Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch) and heat over medium-high heat until shimmering.
