Ingredients

2 large yellow onions

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup buttermilk (or milk mixed with 1 tbsp vinegar)

1 large egg

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

Oil for frying (vegetable or canola)

Optional: Fresh parsley for garnish

Instructions

Prep the Onions: Peel the onions and slice them into 1/4-inch thick rings. Carefully separate the rings and set them aside.

Make the Batter: In a mixing bowl, whisk together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Prepare the Dipping Mixture: In another bowl, combine the buttermilk and egg, whisking until well mixed.

Coat the Onion Rings: Dip each onion ring into the buttermilk mixture, allowing excess to drip off, then coat it with the seasoned flour mixture. Transfer the coated ring to the breadcrumbs and press gently to adhere.

Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (177°C). You can test the oil by dropping in a small piece of batter; it should bubble and rise to the top.

Fry the Onion Rings: Carefully place a few coated onion rings into the hot oil, taking care not to overcrowd the pan. Fry for 2-3 minutes or until golden brown, turning occasionally for even cooking.

Drain and Cool: Once cooked, use a slotted spoon to remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve: Repeat the frying process with the remaining onion rings. Garnish with fresh parsley if desired and serve immediately with your choice of dipping sauce (like ranch, aioli, or ketchup) for an extra treat!
