Greek Chicken Pita Pockets

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts

3 tablespoons olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1 small cucumber, shredded and drained

1 clove garlic, minced

Juice of 1/2 lemon

1 tablespoon fresh dill, chopped

Salt to taste

For Assembly:

4 whole wheat pita bread

1 cup cherry tomatoes, halved

1 cup romaine lettuce, shredded

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Kalamata olives for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare the Tzatziki Sauce:

        - In a separate bowl, combine the Greek yogurt, shredded cucumber (make sure to squeeze out excess water), minced garlic, lemon juice, dill, and salt. Stir well and refrigerate until ready to use.

          Cook the Chicken:

            - Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely browned. Remove from heat and let rest for a few minutes before slicing into strips.

              Assemble the Pita Pockets:

                - Warm the pita breads for about 1 minute on each side in a dry skillet or microwave. Slice each pita halfway to create a pocket. Stuff each pocket with a few pieces of grilled chicken, then add cherry tomatoes, romaine lettuce, red onion, and a sprinkle of feta cheese.

                  Finish with Tzatziki:

                    - Generously drizzle the tzatziki sauce inside the pitas, and top with Kalamata olives if desired.

                      Serve:

                        - Serve the Greek chicken pita pockets immediately while warm, and enjoy the fresh and vibrant flavors!
