Grilled Chicken Fajita Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 large red onion, cut into wedges

3 tablespoons olive oil

2 tablespoons lime juice

3 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon oregano

1 teaspoon salt

½ teaspoon black pepper

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Marinate the Chicken: In a large mixing bowl, combine the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Whisk together until well combined. Add the cubed chicken and mix to coat. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prep the Vegetables: While the chicken is marinating, prepare your vegetables. Cut the red and green bell peppers into 1-inch pieces and the red onion into wedges, ensuring all pieces are similar in size for even cooking.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken, red bell pepper, green bell pepper, and onion onto the skewers, alternating between the chicken and the vegetables, until everything is used up.

        Grill the Skewers: Once the grill is hot, oil the grates lightly to prevent sticking. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and has a nice grill char. The vegetables should be tender but still slightly crisp.
