Before diving into the shaping and grilling of your fritters, it's crucial to preheat your grill. This step is often overlooked but plays a vital role in achieving that perfect golden crust while ensuring even cooking throughout. The ideal temperature for grilling corn fritters is medium-high, around 375°F to 400°F (190°C to 200°C). Maintaining this temperature allows the outside to crisp up nicely while keeping the inside fluffy and moist.

Ingredients

2 cups fresh corn kernels (approx. 4 medium ears of corn)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

2 large eggs

1/4 cup buttermilk (or milk with a splash of vinegar)

1/4 cup chopped green onions

1/4 cup crumbled feta cheese (optional)

1/2 cup diced red bell pepper

Oil for grilling (olive or vegetable)

Instructions

Prep the Corn: Start by shucking the corn and removing the kernels from the cobs. You can use a sharp knife for this, running it down the sides of the cob to gather the fresh kernels.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and smoked paprika. Whisk these ingredients together until they are evenly distributed.

Combine Wet Ingredients: In another bowl, beat the eggs, then stir in the buttermilk. Add the chopped green onions, red bell pepper, and if using, the crumbled feta cheese. Mix until well combined.

Merge Ingredients: Pour the wet mixture into the dry ingredients and gently fold with a spatula. Add the fresh corn kernels and stir until just combined. Be careful not to overmix; a few lumps are okay!

Preheat the Grill: Light your grill and allow it to preheat to medium-high heat (about 375°F or 190°C). Lightly oil the grates to prevent sticking.

Shape the Fritters: Using a 1/4 cup measuring cup, scoop the batter and form it into small patties, about 1/2 inch thick. Place them on a plate as you work.

Grill the Fritters: Carefully transfer the corn fritters to the hot grill. Cook for about 3-4 minutes on each side or until they develop beautiful grill marks and are cooked through. Avoid pressing them down while cooking to keep them fluffy.

Serve: Once grilled, remove the fritters from the grill and let them rest on a paper towel briefly to absorb any excess oil. Serve warm with a side of sour cream, avocado dip, or your favorite salsa.
