4 cups fresh strawberries, hulled and halved

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup vanilla ice cream (for serving)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prep the Strawberries: In a medium bowl, combine the halved strawberries, granulated sugar, lemon juice, and vanilla extract. Toss to coat the strawberries evenly and let them sit for about 15 minutes to macerate.

    Prepare the Crisp Topping: In another bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture becomes crumbly and well combined.

      Preheat the Grill: Preheat your grill to medium heat (about 350°F or 175°C). If using a gas grill, make sure all burners are on; if using charcoal, allow the coals to ash over.

        Grill the Strawberries: Place a grilled-safe basket or a piece of aluminum foil lightly coated with cooking spray on the grill. Pour the marinated strawberries into the basket. Close the lid and grill for about 5-7 minutes until the strawberries are softened and starting to caramelize.

          Add the Crisp Topping: Carefully remove the grill basket or foil and sprinkle the oat and flour mixture evenly over the softened strawberries. Return it to the grill, close the lid, and let it cook for another 10-15 minutes, or until the topping is golden brown and crisp.

            Serve: Remove the grilled strawberry crisp from the grill and let it cool for a couple of minutes. Serve warm, topped with scoops of vanilla ice cream and garnished with fresh mint leaves, if desired.
